PARMESAN RICE BAKE
1¾ cups water
1 cup Basmati rice
⅓ cup vegetable oil, divided
1 large egg, beaten
½ cup chopped fresh parsley
4 ounces shredded sharp Cheddar cheese
1 medium onion, chopped
1 teaspoon salt
1 (10¾-ounce) can cream of celery soup
1½ cups grated Parmesan cheese
1½ cups bread crumbs
¼ cup (½ stick) butter, sliced
Coat a 2-quart baking dish with nonstick cooking spray. In a medium saucepan bring the water and 2 tablespoons of the vegetable oil to a boil over high heat. Add the rice, reduce the temperature to low, cover, and simmer for 20 minutes.
Preheat the oven to 350 degrees. In a medium bowl combine the egg, the remaining oil, parsley, Cheddar cheese, onion, salt, and celery soup. Add the cooked rice. Spread the rice in the prepared casserole dish, and sprinkle with the Parmesan cheese. Spread the bread crumbs over the cheese and dot with the butter slices. Bake for 30 minutes
